Walnut With Cornish Sea Salt Caramel Sauce

The core porridge recipe minus the sugar. Take 1 tblsp caster sugar and 1 tblsp of unsalted butter, stir until just melted, leave on a medium heat to caramelise (resist the temptation to stir, it’ll make it big sugar crystals!), quickly stir in a splash of double cream and reduce until you get the consistency you prefer. Top with a few chopped walnuts.
